The meat is fat free and contain more protein than beef.

Bison neat although often referred to as buffalo meat, the North American Bison is actually the source of the flavourful red bison meat that is 97% fat free and contain moreĀ  protein than beef.

Bison meat has a rich full flavour and it is tender.

Bison meat is considered more tender and of better quality than the good races of beef, such as Angus, Limosin and Charolais. The meat is dark red and has a slight line of fat in it.

Bison meat should be prepared similar to beef.
